Perfect Brewing Guide

Grind your beans just before brewing to maximize freshness and flavor. A medium-coarse grind typically works best for pour-over. Rinse the paper filter with hot water to eliminate paper taste and warm the dripper, then discard the rinse water. Use water between 195°F and 205°F (90°C to 96°C) for extraction. Pour a small amount of hot water over the coffee grounds (about twice the weight of the coffee) and let it sit for 30-45 seconds to release gases. Pour water in a slow, spiral motion, starting from the center outward, and avoid pouring directly on the filter edges. Maintain a consistent pour rate until you reach the desired brew volume. A common ratio is 1:15 to 1:17 (coffee to water). For example, 20 grams of coffee with 300-340 grams of water. Pour-over coffee is at its freshest and best flavor profile right after brewing. Serve in a pre-warmed mug or cup.
