Developed by using an anaerobic cherry fermentation process in which the cherry is completely removed and the beans are washed clean, leaving a mucilage layer which looks like honey to stick to the beans as they dry, allowing them to infuse more sweetness and complexity into the beans as they dry.
After harvesting, the coffee cherries are depulpered and washed to remove any mucilage, this process uses water to clean the beans resulting in a very clean flavor profile. This process brings out a pure, vibrant flavor which punctuates notes of milk chocolate, honey, hints of yellow fruits and vanilla.
Following the same process as the Caicedo coffee bean, and also bringing out a pure and vibrant flavor with deep chocolate notes, sugar cane and nutty hints, this coffee is a consistent companion.
